A fajita steak quesadilla is the perfect way to stretch a little bit of beef into a meal that's filling enough to feed the whole family! You can make them using leftovers and a few ingredients that you always keep on hand. Now that's what we call a ShelfCookingWin.

There's nothing worse than having a little bit of meat and needing to feed a whole lotta people with it. Or so you thought! Wanna know a little secret? Quesadillas are the perfect way to stretch a small amount of meat into a meal for your whole family!

Yep, you read that right. One of our favorite and easiest ways to make a fajita steak quesadilla is from leftovers. Specifically, the leftovers from our fajita steak rice bowls! How is it that the steak, peppers, and onions manage to taste better after they've been sitting in the fridge for a day or two?! It's some kinda magic, for sure.

Much like with the steak rice bowls, you really can't go wrong dipping these in sour cream and salsa. You can even serve your leftover guac with them! Want to know how to keep your guac from going brown in the fridge?

Yes, we know. It sounds crazy! But it's really the only way to keep air from touching the guacamole and turning it brown. The guac is dense enough that the water won't seep into it and will just sit on top, as long as you pack it down well. You're welcome for that random and super helpful TipOfTheDay.

Did you know you can freeze quesadillas? Make them as normal, then allow to cool. Cut if you'd like, then wrap really well in foil and store in a freezer bag. Thaw overnight in the fridge, then reheat in the foil in the oven at 350° for 10-15 minutes or until heated through.

If that isn't the easiest and most delicious steak quesadilla that you've ever had, then we don't know what is! Don't you love how versatile they are? It really is the perfect meal for a busy week night.

I made a lot of alterations, but it's a great concept. Thank you for the idea. I had left over steak and didn't know what to do with it, until I found this recipe. I sauted onion, red and green pepper, and mushrooms. Add left over steak sliced into thin strips. A dash of hot sauce and a dash of bbq sauce, since I didn't have steak sauce. Let sit at a simmer. Sprayed pam on foiled sheet, put down a shell, sprinkled cheddar, added fill, sprinkle more cheddar, place top layer of shell, brushed with olive oil. Baked 425 for 8 min, flip brush olive oil, bake 5 min. Used a pizza cutter to slice. Delish!

In 2 medium bowls, divide the chiles, red onion, and half the lime juice. Add a quarter of the grated garlic to each bowl; season with salt. Let stand for a few minutes. To one bowl, add the tomatoes, some cilantro, and a few dashes of hot sauce for the pico de gallo. In the other bowl, using a potato masher or fork, mash in the avocado for the guacamole.

Add 2 tablespoons oil, two turns of the pan, to the skillet. Add the beef in a single layer and cook until brown and crispy, 2 to 3 minutes. Turn the beef over and cook until browned, about 2 minutes more. Transfer to a plate.

Add the remaining 1 tablespoon oil, one turn of the pan, to the skillet. Add the white onion, bell pepper, and pickled jalapeos and cook, tossing occasionally, until crisp-tender, 3 to 4 minutes. Add the remaining garlic and lime juice; season with salt and pepper. Mix in the beef and remove from heat.  

Heat a nonstick skillet over medium. Spray 1 tortilla lightly with cooking spray and add to the skillet, sprayed-side down. Scatter a quarter of the cheese on top. Arrange about a quarter of the beef and vegetables on 1 side of the tortilla. Fold the tortilla over the filling and cook, turning once, until golden and crispy, 1 to 2 minutes per side. Repeat with the remaining tortillas, cheese, beef, and vegetables.

Add the remaining 1 tbsp. oil, one turn of the pan, to the skillet. Add the white onion, bell pepper, and pickled jalapeos and cook, tossing occasionally, until crisp-tender, 3 to 4 minutes. Add the remaining garlic and lime juice; season with salt and pepper. Mix in the beef and remove from heat.

Game plan: To prep for tailgating, season the steak with the chipotle, salt, and pepper; mix the cheeses together; and dice up the jalapeos before heading to the stadium. Assemble the quesadillas at the grill. Ar kepsnys Quesadillas iš Meksikos?
