Potatoes au gratin are one of those things that I can eat any time, any day. I mean, seriously. You smother potato slices in cream and cheese and then bake it. Nothing bad about that. I've made countless variations over the years, but the experimenting ends with this version. I have two words for you: Goat. Cheese. I should just stop right there because really - what else could I possibly say?

I always think of potatoes au gratin as being a good dish for Easter, and this version would be especially great. The goat cheese elevates it to "holiday meal" level, but it's still incredibly easy and low-maintenance. Assemble it in the morning, then after church just pop it in the oven. 1. Position rack in center of oven and preheat to 350F. Generously butter 9-inch-diameter glass pie dish. Place pie dish on rimmed baking sheet. Combine cream and garlic in small saucepan and bring to simmer over low heat. Cover and remove from heat. . Arrange 1/3 of potato rounds, slightly overlapping, in concentric circles in prepared pie dish; sprinkle with 1/2 teaspoon thyme and season lightly with salt and pepper. Pour 1/4 cup garlic cream over. Repeat layering 2 more times with remaining potato, thyme, salt, pepper, and garlic cream. Pour remaining garlic cream over, then 1/4 cup milk. Sprinkle cheese over. . Bake gratin until golden on top and potatoes are very tender, 1 hour to 1 hour 10 minutes. Let potato gratin rest 10 minutes before serving.

Brush a 9 x 13 x 2-inch baking dish with olive oil. In a medium sauté pan, heat 2 tablespoons of olive oil and cook the onions over medium-low heat for 8 to 10 minutes, until translucent. Add the garlic and cook for another minute. Spread the onion mixture on the bottom of the baking dish.

The recipe calls for using Boursin cheese with herbs and garlic so you get the added bonus of all the garlic and herb flavoring, as well creating a unique flavor, not found in any other scalloped potato.

Boursin cheese is a soft, creamy, spreadable cheese that is available in most grocery stores. Its texture is similarto whipped cream cheese. It comes in a variety of flavors and is obviously great in this recipe, or just used as a spread for crackers.

Arrange half the sliced potatoes in overlapping rows in theprepared baking dish. Generously season with salt and pepper and pour half the cream and cheese mixture evenly over potatoes. Repeat with remaining potatoes and cream mixture.

This recipe is fairly straightforward. The Boursin cheese is stirred into a mixture of cream and half-and-half to make a luscious sauce that really makes these scalloped potatoes ROCK! The original recipe called for new red potatoes but I prefer it made with russet.
